TRI-DOSHA DETOX KITCHARI
Kitchari means mixture, usually of two grains. This is one kitchari recipe that is particularly nourishing and easy to digest.
Kitchari is very popular basic meal in Ayurvedic cooking. Composed of rice and mung dal, it has as many variations as there are cooks who prepare it. This one-pot dish, originates from the Asian subcontinent and it’s a thousands of years old. The skilful use of spices and vegetables can produce balancing effects for the three bodily doshas. It has many qualities and it’s quick and easy preparation makes it a popular dish for almost every lifestyle.
This complete food is easy to digest and gives strength and vitality. It nourishes all the tissues of the body. Kitchari is the prefect food to use when fasting or while going through cleansing programs. Kitchari is excellent for detoxification.
You need to soak the Mung Dahl the day before making this recipe
2 TBLSP GHEE
2 TBLSP CUMIN SEEDS
50 GRAMS Freshly grated GINGER
100 GRAMS GREEN BEANS, sliced into small pieces
100GRAMS CARROTS, chopped into small pieces
1 CUP MUNG DAHL (Yellow Lentils), soaked for at least 8 hours or overnight
1 CUP RICE (white, brown or red is fine), cooked
2 TSP SALT
2 TSP TURMERIC POWDER
1⁄2 TSP BLACK PEPPER
6 CUPS BOILING WATER
Soak the Mung Dahl the day before. Cook the rice.
Heat the ghee in a large saucepan.
Add the cumin seeds and ginger, then cook until the seeds start to pop.
Add the green beans & carrot. (You can also add other vegetables if you like) Add the soaked (and drained) Mung Dahl and the cooked rice. Stir to combine Add the salt, turmeric and black pepper. Stir to combine.
Add the boiling water, stirring to combine.
Cook for about 1 hour over a low heat or until the lentils are soft.
NOTE: You may need to add more boiling water towards the end if the kitchari gets too thick.
